Beef and Chicago – Then: It’s 1900, and the First International Livestock Exhibition has solidified Chicago’s spot as the meatpacking center of the world. Enter another Chicago resident who, in 2012, started a second beef revolution: Pre Brands.

“We’re 100% grass fed and finished, but not all grass fed is created equal,” says Lebovich.
True to form, Pre uses only the most tender breeds (Angus and Hereford) that are pasture raised year round on a variety of nutrient-rich grasses. The beef is tested for quality of life – after all, stressed meat is tough meat – and scrutinized for perfect marbling to ensure peak flavor. Jamaican Jerk Sirloin Skewer Bowl
Cook time: 10 min | Prep time: 5 min | Serves 1-2

Ingredients
1 Pre® Brands Top Sirloin Steak, room temperature
1 tsp chili powder
1/2 tsp paprika
1/8 tsp all-spice
1/2 tsp oregano
1/2 tsp sea salt (Redmond’s Real Salt is our favorite)
1/4 tsp cinnamon
1/4 tsp cayenne
1/4 tsp black pepper
2 tbsp grapeseed oil or melted coconut oil
Instructions
Preheat a cast iron skillet or non-stick skillet to medium high heat.
Prepare the rub. Combine all spices in a small bowl.
Add oil to the spices to make a paste-like mixture.
Rub the spice mixture all over the steak.
Place into greased hot skillet. If your steak is 2″ thick let it cook for 5 minutes on each side for medium rare.
Let rest for 6 minutes on a cutting board.
Slice the steak into thin strips and thread onto wooden skewers. Enjoy!
Serving suggestion: Serve with a bowl of your favorite veggies and grains.
